This salad is refreshing, rich, and full of healthy nutrients. This is one of my easiest, basic salad recipes which with any combination of additionally added greens, and other added extra toppings, can be either an easy lunch or the bedrock of most meals.
I’m using cherry tomato and Kalamata olives as topping, but you can use whatever vegetables are in your fridge – cucumber, bell pepper, capers – all make great swaps.
Tuna salad with kale, and avocado

1 can of tuna
1 cup chopped kale
6-8 pieces of cherry tomatos, halved
1 ripped avocado, diced
6-8 pieces of olives,
2-3 tabelspoons olive oil, chopped
2 tablespoons fresh lemon juice
salt
Directions
- In a large bowl combine tuna, kale, cherry tomato, olives and salt.
- Pour olive oil and lemon juice over salad and whisk again.
